Rich Dark Christmas Cake – Santa’s Favourite!

The method for making this Rich Dark Christmas cake is the same as for my Golden Christmas cake, with just a few changes in ingredients. So take a look at this video, it will show you exactly how to make it. This traditional recipe uses Black Treacle to sweeten the cake, and I used brandy in the mix and gave it a drink of Amaretto after it was cooked to make it moist.

Ingredients

315g/10oz Butter

10Tbls Black Treacle

315 mls/10floz Brandy or alcohol of your choice.

Juice and grated zest of one Orange

Juice and grated zest of one Lemon

2lb3oz/1Kilo of Mixed Dried Fruit

115g/4ozGlace Cherries, chopped

315g/10oz Apricots, chopped

315g/10oz Dates, chopped

1 tsp Bicarbonate of Soda

3 Medium Eggs, lightly beaten

500g/1lb Self Raising Flour, sifted
